How to make No-Bake Brownie Bites

First, make your brownie dough. Using a hand or stand mixer, beat the brown sugar, granulated sugar, and butter until it’s all combined. Add the vanilla extract and mix until the dough is smooth, then add the all-purpose flour and cocoa powder, mixing again until it forms a soft ball. Finally, fold in the mini chocolate chips.

Second, chill the dough. Roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper. Put the brownie balls in the fridge for about 20 minutes to chill.

Third, melt your chocolate. Use a double broiler or a microwave-safe container to melt the German chocolate. (If you’re using a microwave, heat it in 20-second bursts, stopping to stir after each interval until the chocolate is smooth.)

Fourth, coat the brownies in chocolate. Dip each brownie bite in the melted chocolate, allowing the excess to drip off, before transferring them back to the baking sheet. Repeat with all of the brownie bites until they’re all coated.
